Sourcing the World’s Finest Micro Lots
Exceptional coffee can be found in every great coffee-producing region of the world.
To discover these remarkable coffees, Dorado Select partners with some of the specialty coffee industry’s most respected green coffee importers, including Royal Coffee and Café Imports. These organizations work directly with producers, cooperatives, and exporters across Latin America, Africa, and Asia, providing access to some of the world’s finest traceable micro lots.
These trusted relationships allow us to evaluate coffees from hundreds of producers while maintaining complete transparency from farm to cup.
Step 1
Evaluating Green Coffee. Every coffee begins as green coffee.
Before a coffee is ever roasted, we study its complete profile, including:
- Country of origin
- Growing region
- Farm or producer
- Elevation
- Coffee variety (cultivar)
- Harvest season
- Processing method
- Moisture content
- Density
- Physical bean quality
- Availability
These characteristics provide valuable insight into a coffee’s potential long before the first cup is brewed.
Step 2
Cupping & Quality Assessment. Coffee is judged by what’s in the cup.
Each potential selection is evaluated using professional cupping practices that assess every aspect of the coffee’s sensory experience.
We look for:
- Cleanliness
- Sweetness
- Acidity
- Body
- Balance
- Flavor clarity
- Aroma
- Finish
- Overall harmony
Only coffees demonstrating exceptional quality move forward in our selection process.
Step 3
Flavor Complexity
Our goal isn’t simply to find coffee that tastes good.

The finest coffees are often the rarest.
Micro lots represent small harvests produced under exceptional growing conditions and meticulous care. Many consist of only a few bags, and once they’re gone, they cannot simply be reproduced until the next harvest—if at all.
This natural scarcity is what makes every Dorado Select release unique.
Rather than maintaining a permanent catalog, we continually seek new discoveries that showcase the remarkable diversity of specialty coffee.

Our Selection Standards. Every coffee we offer must satisfy one simple question:
Would we proudly serve this coffee to our own family and closest friends?
Before any coffee becomes part of the Dorado Select collection, it must demonstrate:
